Okay, so it has been a long time since I’ve discussed anything travel-related. Today, I am going to fix that with a top five list of my DREAM travel Destinations. All of which are in no particular order – how could I possibly decide? And, I’ve been to a few. But, it would be my dream to return.

{Marbled Cupcakes for Four}

Hello, cupcake!

Are you ready for some sweets? Me too.

If you’re anything like me, you could eat a whole batch of cupcakes … if you let yourself. Delicious … AMAZING … but bad for my bottom half.

There are TONS of “Cupcakes for Two” recipes out there, but what about for people with kids? My little family of four LOVES cupcakes, so it makes perfect sense to have a recipe for Cupcakes for four.

My love decided he wanted marbled cupcakes for dessert. Check it out!

Vanilla/Chocolate Marbled Cupcakes for Four
Adapted from How Sweet It Is and Brett Bara
Serves 4
 
Ingredients
 
Vanilla Cake:
 
1 egg white
2 1/2 tablespoons Sugar
2 tablespoons butter, melted
1/2 teaspoon vanilla extract
1/2 teaspoon almond extract
1/4 cup flour
1/4 teaspoon baking powder 
pinch of salt
1 1/2 tablespoons heavy cream (you can use milk, as well)
 
Chocolate Cake:
 
3 tablespoons flour
2 tablespoons sugar
1 teaspoon vanilla extract
1 1/2 teaspoons cocoa powder
1/4 teaspoon baking soda
2 tablespoons cold water
1 tablespoon butter, melted
pinch of salt
2 tablespoons chocolate chips 
 
Preheat oven to 325 degrees. 
 
For each cake flavor, in separate bowls, whisk together wet ingredients (make sure your melted butter isn’t too hot, or you’ll scramble your egg!), then slowly add the dry ingredients. 
 
Fill four cupcake papers evenly with vanilla batter, then add the chocolate. Swirl. Bake for 15 to 18 minutes, or until an inserted toothpick comes out clean. Enjoy! 
 
Frost them with whatever frosting you prefer! We had some left over vanilla buttercream, but a mini frosting recipe is as followed.
 
Coconut Chocolate Frosting For Four Cupcakes
Adapted from Brett Bara 
Frosts 4 cupcakes
 
2 tablespoon butter, melted
2 tablespoon + 4 teaspoons cocoa powder
6 tablespoons confectioners sugar
2 teaspoon half and half or any milk/cream
1/4 teaspoon coconut extract

dash of salt

After you melt the butter, add all of the ingredients to the melted butter and whisk to combine. Refrigerate for 10 minutes or until frosting is somewhat cooled. Give it another good whisk again then frost when cupcakes are cool enough. Enjoy!

You know your husband is an Australian when …

THIS happens.

What is this, you ask? Well, allow me to fill you in.

I was folding laundry and completely minding my own business for once, and my dear husband, the Australian, came in and announced that he had a delicious coconut and chocolate dessert for me to try – my absolute favorite combination, by the way. Before I could really take a good look at this shredded coconut chocolate imposter, it was shoved into my mouth. See above picture for proof.

As you’ve already figured out – IT. WAS. NOT. COCONUT. OR. CHOCOLATE. It was THIS.

Vegemite. Salty, yeasty, vomit-inducing VEGEMITE. Also known as, Vege-yuck. With butter and parmesan cheese on a cracker. Excuse me, biscuit. Wait, huh? Cracker? Whatever.

Seriously, I just threw up a little in my mouth looking at that picture.

I think this might be grounds for divorce. Just saying. Luckily for him, he has a cute face. A very, very cute face.

All I can say is this: Payback is a bitch slap. I can “bake” too, dahhhling.
